Herb Iced Tea

I usually make this with the sun tea method and put it out in the morning while I start work. And, it's one I drink iced in the summer.... very refreshing after working in the hot, humid Texas weather.
Place in a gallon (or 4 liter?) jar:
8 green tea bags (or equivalent amount of green tea?)
generous handful of fresh lemon balm
generous handful of fresh mint: spearmint, peppermint, chocolate mint (very minty), or apple or orange mint or a combination
several stems of fennel leaves and/or flowers
2-3 inch long stem of fresh stevia
Fill the jar about 2/3 full with water. Place in a sunny spot for 3-4 hours. Remove tea ingredients or pour steeped liquid off the tea ingredients. Add honey, if desired, unless you used stevia in the brew, add ice, and enjoy!
I own a little, rural herb nursery here in South Central Texas where I grow not only herbs but also a selection of open pollinated and heirloom vegetables in season. I sell at my farm and also at Farmers' Markets, and herb and garden shows throughout the year.
